
Gummy Pectin (Slow-Set, for Homemade Gummies)
Gummy Pectin is the plant-based setting agent we use for our vegan gummies. Unlike gelatin it is fruit derived, holds up in warm weather far better, and gives that clean bite you get from a store gummy. This is a slow-setting gummy pectin, which means you have working time to pour into molds before it gels.

Rough ratio. Most gummy pectin recipes run about 1 part pectin to 20 to 25 parts sugar by weight, cooked with water and a little citric acid to set. Whisk the pectin into the dry sugar first so it does not clump, bring the syrup to around 220 to 225F, take it off heat, add your flavor and any extract, then pour. Every pectin behaves a little differently, so make a small test batch first.
Common questions
- Is this the same pectin as the canning kind at the grocery store? No. Canning pectin sets fast and soft. This is a gummy grade that sets slower and firmer.
- Can I make sugar-free gummies with it? Regular pectin needs sugar to set. Sugar-free needs a different pectin type, so this one is for sugar recipes.
