Tapioca Starch (Food Grade)
Not the gummy syrup. The syrup we actually use for our gummies is the organic tapioca syrup, the sugar base that pairs with agar. This page is the dry dusting starch.
Tapioca Starch is the fine white starch from cassava root, and in a gummy kitchen it does two jobs: it is the dusting starch for molds and a starch bed for depositing gummies, and in small amounts it softens the chew of a pectin gummy. It is also the starch of choice for a gluten-free thickener in a syrup or a capsule filler that needs a neutral bulking agent.
At a glance
- Pure tapioca starch, gluten free, no additives
- Dusting starch for gummy molds and starch beds
- Neutral thickener and bulking agent
- 1 lb and 2 lb
Kitchen note. For a starch bed, dry the starch in a low oven for an hour first so it pulls moisture from the gummy instead of adding it. For dusting silicone molds, a light coat is enough, then brush the extra off the finished gummies.
Goes with. Agar agar powder for the set, fruit syrup for the flavor, or the whole set at once in the Home Gummy Kit. See the rest in Accessories and DIY Supplies.
