Agar Agar Powder is the red-algae gelling agent that vegan kitchens use in place of gelatin. It sets firmer and cleaner than gelatin, holds at room temperature without melting, and needs no refrigeration to gel. In gummy work it makes a firmer, snappier gummy than pectin and is the simplest vegan set to learn.

How to use it. Whisk the powder into cold liquid, bring it to a boil and hold a full boil for about 2 minutes while stirring so the agar dissolves completely, then pour into molds. It sets within 30 to 60 minutes at room temperature. Unlike gelatin it does not tolerate being reheated many times, so measure once and pour once.

Common questions

  • Agar or pectin for gummies? Agar makes a firmer, more jelly-like gummy and is easier for a first batch. Pectin is closer to a store gummy chew.
  • Does it have a taste? No, it is neutral.
