The root. Kava, Piper methysticum, is a Pacific Island shrub whose root has been prepared and shared socially across Vanuatu, Fiji, Tonga, Samoa and Hawaii for centuries. Traditionally the root is ground, kneaded in water and strained, and the resulting drink is passed around a bowl. Noble kava means a cultivar with a long record of daily traditional use, as opposed to tudei and wild varieties, and it is the only kind that belongs in a product like this.

Kavalactone profile. Kava's character comes from six major kavalactones, and which ones lead determines how a given kava reads:

• Kavain: the bright, clear, sociable one, and the lead in this paste
• Dihydrokavain: quick arriving, light
• Methysticin and dihydromethysticin: slower, heavier, more body-present
• Yangonin and desmethoxyyangonin: slow building, rounding out the profile

A kavain-forward kava like this one is described as heady rather than heavy, which is why it suits daytime use better than a methysticin-dominant kava does.

Why CO2 extraction. Supercritical CO2 pulls the kavalactones without leaving solvent residue and without the heat that degrades them. The result is a thick amber paste rather than a powder, which is also why it is so concentrated: at 85% kavalactones, almost everything that is not kavalactone has been left behind in the root.

How to use it.

• Under the tongue: a rice-sized amount, held for a minute. Fastest, and strongly bitter.
• In a warm drink: stir it into hot water, tea, coconut milk or coffee. Fat helps it disperse, so milk or a spoon of coconut oil works better than water alone.
• Straight off a toothpick: the simplest way to measure a rice-sized portion accurately.

Kava numbs the mouth and tongue briefly. That is normal and it passes in a few minutes.

Storage. Sealed, cool and out of sunlight. The paste stiffens in the cold and softens in a warm room. If it has gone firm, warm the jar in your hand for a minute and it scoops normally.

Common questions

• How much is a rice-sized amount? About 50mg, which is what the label suggests as a starting portion. A toothpick tip is the easiest way to judge it.
• What does high kavain change? Kavain is the clear, sociable kavalactone. A kavain-forward kava reads heady and bright rather than heavy and sedating.
• Why does it numb my mouth? That is a normal property of kavalactones on contact. It passes within a few minutes.
• Do I need to brew it? No. That is the point of a paste. No grinding, no kneading, no strainer bag.
• 85% or 70%? The 85% is more concentrated by weight, so a smaller portion goes further. Both are CO2 extracted from noble root.
